Ingredients:
• 3 tbsp – Sugar
• 1/2 tsp- gelatine
• 250 g – mascarpone
• 4 tbsp – Cream
• 200 g – whipping Cream
• 150 g – strawberries, half chopped and half sliced
• 100 g – sponge fingers (or use amaretti biscuits)
• 4 tbsp – coffee syrup
• 4 – amaretti biscuits (optional)
Method:
- Dissolve the gelatine in water until swollen and melt over a double boiler.
- Fold in the mascarpone cream and whipping cream. Add in sugar.
- Mix in the chopped strawberries, put in a large bowl, and refrigerate for an hour.
- Line the base of four glasses or cups with sponge fingers and drizzle over with the coffee syrup. Put scoops of the mascarpone mixture over it.
- Garnish with sliced strawberries and amaretti biscuits and serve chilled.
