Ingredients:

• 3 tbsp – Sugar
• 1/2 tsp- gelatine
• 250 g – mascarpone
• 4 tbsp – Cream
• 200 g – whipping Cream
• 150 g – strawberries, half chopped and half sliced
• 100 g – sponge fingers (or use amaretti biscuits)
• 4 tbsp – coffee syrup
• 4 – amaretti biscuits (optional)

Method:

  1. Dissolve the gelatine in water until swollen and melt over a double boiler.
  2. Fold in the mascarpone cream and whipping cream. Add in sugar.
  3. Mix in the chopped strawberries, put in a large bowl, and refrigerate for an hour.
  4. Line the base of four glasses or cups with sponge fingers and drizzle over with the coffee syrup. Put scoops of the mascarpone mixture over it.
  5. Garnish with sliced strawberries and amaretti biscuits and serve chilled.
