Ingredients:
• 8 – Brinjals (medium size, round ones preferred )
• 6 – Green chillies
• 2 bunches – coriander
• 1 small cup – oil
• salt to taste
• 1/4 tbsp – Tamarind paste
Method:
- Make a paste of green chillies and coriander leaves. Add salt and mix well.
- Cut brinjals into 4 pieces vertically such that the pieces hold together at one end.
- Stuff sufficient green chilli and coriander paste into the brinjals.
- Heat oil in a thick-based pan and fry the brinjals.
- Add tamarind paste after the brinjals have been fried for a few minutes.
- Stir the brinjals till they are fried on all sides.
- Tastes good with rotis or with white rice and ghee.
