Ingredients:
• For dough:
• 1.5 cups Wheat flour
• salt to taste
• water to knead dough
• For stuffing:
• 1 medium head broccoli, chopped finely in chopper
• 2 potatoes, boiled and mashed
• 2 green chillies, finely chopped
• 1-inch ginger, finely chopped
• 1 flake garlic, finely chopped
• salt to taste
• 1 tbsp oil
Method:
- Method for dough:
- Mix flour, salt, and water, and knead it into a soft, smooth dough. Keep aside for 15 minutes and knead again if required.
- For stuffing:
- Heat oil and add ginger, garlic, and chillies and stir.
- Add broccoli and stir for 2-3 minutes.
- Add salt, mix, and take off fire.
- Mix into mashed potatoes. Keep aside to cool a little.
- To proceed:
- Take a ping-pong-ball-sized dough and shape it round.
- Roll into a thick chapati 5-inch in diameter.
- Place same sized ball of stuffing in the centre of the chapati.
- Cover by lifting chapati from all sides towards centre.
- Press lightly, dust with dry flour, and roll into 7-inch diameter rounds.
- Heat a griddle and shallow fry each paratha till golden and crisp.
- Serve hot with chutney or ketchup.
