Ingredients:
• 2-3 – boiled Potatoes
• 1/2 cup – boiled Corn
• 1 – finely chopped Onion
• 1 – finely chopped Tomato
• 1 tsp – Red Chilli powder
• 1/2 tsp – Turmeric powder
• 1/2 tsp – coriander powder
• 1/2 tsp – Garam Masala
• 1/2 tsp – chaat masala
• 1/2 tsp – cumin powder
• Salt to taste
• 1 cup – skimmed Milk
• Oil
• Coriander for garnishing
Method:
- Boil potatoes and chop off the tops. Scoop out contents and keep aside.
- For stuffing: Heat oil in a non-stick pan and saute onion till it is golden brown.
- Add salt, chaat masala, chilli powder, turmeric powder, boiled corn and the mashed, scooped out potato.
- For curry:
- Heat oil, fry potato and when it is slightly brown remove and fill with stuffing.
- To the hot oil, add cumin, onion, tomato, chilli powder, turmeric powder, coriander powder and salt.
- Fry well, add garam masala powder and skimmed milk.
- Add stuffed potato and serve hot.
