Ingredients:

• 2-3 – boiled Potatoes
• 1/2 cup – boiled Corn
• 1 – finely chopped Onion
• 1 – finely chopped Tomato
• 1 tsp – Red Chilli powder
• 1/2 tsp – Turmeric powder
• 1/2 tsp – coriander powder
• 1/2 tsp – Garam Masala
• 1/2 tsp – chaat masala
• 1/2 tsp – cumin powder
• Salt to taste
• 1 cup – skimmed Milk
• Oil
• Coriander for garnishing

Method:

  1. Boil potatoes and chop off the tops. Scoop out contents and keep aside.
  2. For stuffing: Heat oil in a non-stick pan and saute onion till it is golden brown.
  3. Add salt, chaat masala, chilli powder, turmeric powder, boiled corn and the mashed, scooped out potato.
  4. For curry:
  5. Heat oil, fry potato and when it is slightly brown remove and fill with stuffing.
  6. To the hot oil, add cumin, onion, tomato, chilli powder, turmeric powder, coriander powder and salt.
  7. Fry well, add garam masala powder and skimmed milk.
  8. Add stuffed potato and serve hot.
