
Ingredients:
• Cucumber 2, medium size
• green Chana (chick peas) – 1 cup, cooked
• fresh curds – 1 cup
• roasted sesame seeds – 3 tbsp
• Tomato – ½ cup, chopped
• Garlic 2 flakes, minced
• green chili – 1 tsp, minced
• Ginger paste – ½ tsp
• green chili paste – ½ tsp
• oil – 1 tbsp
• mustard – 1 tsp
• Curry leaves – 1 tsp, shredded
• Lime juice to taste
• pepper to taste
• salt to taste
Method:
- Peel the cucumber and slit into halves.
- Scoop out the core and seeds.
- Cut the halves into 6 cm thick slices.
- Mash the cooked chick peas lightly and combine with sesame seeds, garlic, green chili, salt, pepper and lime juice.
- Stuff cucumber pieces with this mixture and arrange on a serving plate.
- Sprinkle some tomato pieces on each piece.
- Beat curd with ginger and green chili.
- Heat oil; add mustard and curry leaves and pour in the curd.
- Just before serving, pour the curd on cucumber pieces.
