
Ingredients:
• 6-7 – small Bitter gourd (karela)
• salt to taste
• 2 tbsp – oil for pan frying the karelas
• For the filling:
• 1 cup – salted boondi
• For the sauce:
• 1 – medium Apple peeled, cored and cut into small pieces
• 1 cup – Musk melon or sun melon pieces
• 1 tbsp – Sugar
Method:
- To prepare the karelas:
- Scrape the outer skin and slit the karelas to remove the seeds. Boil these karelas in salted water for 3-4 mins.
- Remove and drain out all the excess water. Heat the oil and fry the karelas on medium heat for 2-3 mins.
- Remove and cool.
- Fill each of the karelas with the boondi.
- To prepare the sauce:
- Cook the apple and musk melon pieces in 1 cup water.
- Add the sugar and lower the heat.
- Cook the summer fruits till tender.
- Remove and cool.
- Mash with the back of a spoon or run in a mixer to obtain a smooth paste.
- To serve:
- Place the stuffed karela on a serving plate and top with a serving of the prepared fruit sauce.
