Ingredients:

• 6 – green bell peppers.
• 5 – potatoes, boiled
• 1 tsp -amchoor powder
• 1/2 tsp chilli powder.
• 1 tsp – cumin powder
• 2 – green chillies.
• Coriander – few sprigs
• 1/2 tsp – cumin
• Salt to taste.
• 2 tbsp – oil

Method:

  1. Scoop out the seed from the bell peppers and save it.
  2. Thoroughly mix amchoor, ground cumin, salt, bell pepper seeds, chopped coriander and green chillies to the mashed potatoes and keep aside for an hour.
  3. Stuff bell peppers with this mixture.
  4. In a skillet, add oil and cumin and saute.
  5. Place the peppers in a circle and top it with left over potato mix. Cover and simmer until tender.
  6. When the potato mixture start to turn brown and crispy turn off the heat. Serve.
