
Ingredients:
• 6 – green bell peppers.
• 5 – potatoes, boiled
• 1 tsp -amchoor powder
• 1/2 tsp chilli powder.
• 1 tsp – cumin powder
• 2 – green chillies.
• Coriander – few sprigs
• 1/2 tsp – cumin
• Salt to taste.
• 2 tbsp – oil
Method:
- Scoop out the seed from the bell peppers and save it.
- Thoroughly mix amchoor, ground cumin, salt, bell pepper seeds, chopped coriander and green chillies to the mashed potatoes and keep aside for an hour.
- Stuff bell peppers with this mixture.
- In a skillet, add oil and cumin and saute.
- Place the peppers in a circle and top it with left over potato mix. Cover and simmer until tender.
- When the potato mixture start to turn brown and crispy turn off the heat. Serve.
