
Ingredients:
• 4 – Potatoes
• 1 tbsp – cheese (20 gm)
• 1 tbsp – Corn (15 gm)
• 15 gm – boiled mixed veg, fine chopped
• 2 tbsp – creamy spread Tomato twist (1 tbsp is 20 gm)
• 5-6 pieces – Tomato cherry
Method:
- Bake potatoes at 300 degree F for about 1 hour or boil until soft when pierced with fork.
- Cut each lengthwise, scoop out centres. Fill centres of potatoes with mix of boiled veg, tomato twist, and sweet corn.
- Sprinkle shredded cheese on top and bake in an oven for 5-6 mins.
- Use the cherry tomatoes for garnishing.
