
Ingredients:
• For Filling:
• 1 cup – roasted gram
• 1 cup – Sugar
• 1 tsp – Cardamom powder
• 1 tbsp – grated Coconut
• 1 tsp – Ghee
• Few – Cashew nuts
• For Poli:
• 1 cup – Maida
• 1 pinch – salt
• Oil – for frying
Method:
- Powder the roasted gram and sugar together.
- Break the cashew into small pieces.
- Heat the ghee, roast the broken cashew and coconut.
- Fry for few minutes.
- In a bowl, mix the fried cashew mixture, the powdered gram mixture and cardamom powder, and set aside.
- Mix the maida and salt in a bowl.
- Add water little by little and make a soft dough.
- Keep aside for half an hour.
- Makes small balls from the dough and roll them out into medium sized circles.
- Spread them on paper and leave aside for few minutes.
- Deep Fried them in hot oil.
- Remove them when they are nearly cooked — they should not puff up totally.
- The fried pooris should be soft and not brown or crispy.
- As soon as you remove them from oil, spread the filling over the fried poori and roll it tight.
- These rolls will be soft when made, but turn crisp as they cool.
