Ingredients:
• 400 g – paneer, cut into cubes
• 2 – medium size Onion (paste in mixie)
• 1 tsp – Garlic paste
• 2 tbsp- Sugar
• 1 tbsp – Vinegar
• 2 tsp – Tomato ketchup
• 1 tsp – chilli sauce
• 1 tsp – soya sauce
• 1/2 – cucumber, cut in circles
• 1/2 – carrot, cut in circles
• 1/2 – each of red, yellow and green Capsicums cut into cubes
• 5 to 6 – baby Corns
• 1 tea cup – Pineapple cubed and soaked in Sugar syrup for an hour
• 1.5 tbsp – Corn flour
• 1 pinch – ajinomoto
• Red Chilli powder
• 1 tbsp – sunflower oil/olive oil
• salt
Method:
- Boil cucumber, carrot, capsicum, babycorn and pineapple till all the vegetables become soft (preferably in a microwave).
- Add sunflower oil/olive oil to non stick pan. Saute the onion, garlic and 1 tsp sugar till slightly browned.
- Now add the tomato ketchup, chilli sauce, soya sauce and stir till the paste is cooked.
- Next add all the boiled fruits and vegetables along with the paneer and 2 cups of water.
- Now add the vinegar and sugar. Let it simmer.
- Now mix the corn flour in cold water and pour it on the paneer while stirring continuously.
- Once again let it simmer.
- Sprinkle ajinomoto and mix it well.
- Serve hot with fried rice or noodles.
