Ingredients:
• 1 cup – Sweet Corn / Frozen Corn
• 1/4 cup – Paneer, cubed (Optional)
• 1 tsp – Italian seasoning / Pepper powder
• 1/2 cup – Basmati Rice
• 1/2 tsp – Garam Masala
• 1 tbsp – Oil
• 2 – Green chillies
• Salt to taste.
Method:
- Soak rice in 1 cup of water for 20 mins and pressure cook it by adding salt and 1 tsp of oil.
- Let it cool.
- Heat oil in a pan and saute the paneer cubes (if using) until golden brown.
- Thaw the frozen corn.
- If using fresh ones pressure cook this separately and remove the corn kernels.
- Add oil in a pan and throw in the slit green chillies.
- Add the corn kernels and the paneer cubes and saute for few minutes.
- Add the Italian seasoning and garam masala and salt to taste.
- Mix well.
- Now add the cooked rice and mix gently without breaking the rice.
- Serve with any raitha of your choice.
