Ingredients:

• 1 cup – Sweet Corn / Frozen Corn
• 1/4 cup – Paneer, cubed (Optional)
• 1 tsp – Italian seasoning / Pepper powder
• 1/2 cup – Basmati Rice
• 1/2 tsp – Garam Masala
• 1 tbsp – Oil
• 2 – Green chillies
• Salt to taste.

Method:

  1. Soak rice in 1 cup of water for 20 mins and pressure cook it by adding salt and 1 tsp of oil.
  2. Let it cool.
  3. Heat oil in a pan and saute the paneer cubes (if using) until golden brown.
  4. Thaw the frozen corn.
  5. If using fresh ones pressure cook this separately and remove the corn kernels.
  6. Add oil in a pan and throw in the slit green chillies.
  7. Add the corn kernels and the paneer cubes and saute for few minutes.
  8. Add the Italian seasoning and garam masala and salt to taste.
  9. Mix well.
  10. Now add the cooked rice and mix gently without breaking the rice.
  11. Serve with any raitha of your choice.
