
Ingredients:
• 1/2 can – Sweet Corn
• 2 – Green chillies
• 1 sprig – Mint leaves
• 1 tsp – Coriander leaves
• 1 slice – Bread
• 1 cup – plain flour
• Salt
• Oil
• 1/2 tsp Baking soda
Method:
- Drain corn, saving the liquid in a vessel.
- Transfer drained corn to an electric mixer.
- Add green chillies, mint leaves, coriander leaves.
- Crush well and add to saved corn liquid.
- Run 1 slice of bread in mixie, to make crumbs.
- Add to corn mixture.
- Add plain flour, salt, 1 tbsp oil, baking soda.
- Mix well till no lumps of flour remain.
- Heat a greased waffle iron, do not overheat.
- Pour a ladleful of mixture in centre, depending on size of iron.
- Close and allow to become crisp and golden on both sides.
- Serve hot with chutneys or ketchup or even honey.
