Ingredients:
• For cover:
• 1 cup – Rice flour
• 1.25 cup – Water
• Salt – a pinch
• 1 tbsp – Oil
• For Stuffing:
• 1 cup – Whole moong dal (pressure cooked and mashed)
• 3/4 cup – Jaggery
• 1/4 cup – Grated Coconut
• 1 tsp – Cardamom powder
Method:
- Boil water with salt and oil.
- Slowly add the rice flour and mix it continuously with a spatula. Turn off the heat, close the vessel with a lid and keep aside for 15 minutes.
- Wet your hands and mix the dough well. Make medium sized balls from the cooked rice dough.
- Meanwhile, take the jaggery in a pan, add a quarter cup of water, bring everything to boil.
- Strain this jaggery syrup and reheat along with the mashed whole moong dal, cardamom powder and grated coconut. Cook everything on medium flame.
- When the mixture turns thick, turn off the stove and let it cool completely.
- Make medium sized balls with this filling and keep aside.
- Grease your fingers and flatten the rice balls into small poori shapes.
- Place the whole moong dal filling in the centre and seal the edges together, rolling it up into round balls.
- Steam cook the kozhukattais for 15-20 minutes.
- Serve warm.
