Ingredients:

• 250 gms. Tomatoes
• 10 Pieces of fresh Coriander leaves
• Piece of Ginger
• 1 tsp. Garlic paste
• ½ tsp. Sugar
• 12 tsp. Cream
• ½ tsp. salt
• 2 Green chillies
• 1 tbsp. Butter

Method:

  1. Finely grate the ginger.
  2. Heat the butter and cook the ginger and garlic paste gently but avoid browning.
  3. Chop tomatoes, add to the pan with the coriander leaves, salt and chillies and continue cooking over a low heat.
  4. Push through a strainer.
  5. Put back in the pan and reduce until the right consistency is obtained.
  6. Season and add the sugar.
  7. Finish with the cream and serve hot garnished with coriander leaves.
