Ingredients:

• 1 bunch – Asparagus
• 2 tbsp – Sesame powder, coarsely ground
• 1/2 tsp – Aamchur powder
• Coriander – to garnish
• Coarsely grated Coconut – to garnish
• 1/2 tsp – Cumin seeds
• 1/2 tsp – Mustard Seeds
• Chilli powder, Turmeric powder, Jeera powder, coriander powder, salt, Sugar – to taste

Method:

  1. Cut the asparagus into 1/2-inch pieces.
  2. Pressure cook them for about 6-7 whistles.
  3. Then take the asparagus out, mash and keep aside.
  4. Heat 6-7 tbsp of oil in a flat pan.
  5. Add mustard seeds, and cumin seeds and let it splutter.
  6. Add the chilli powder, turmeric, jeera, coriander powder, amchur powder and salt according to taste.
  7. Add the mashed asparagus and cook for 6-7 minutes, stirring occasionally.
  8. Add sugar and sesame powder and cook for another 3-4 minutes.
  9. Garnish with coriander and coconut.
