
Ingredients:
• 1 cup tomatoes, cut in large pieces
• 1 cup capsicums, cut in chunks
• 2 cups fresh Pineapple pieces
• 2 cups unpeeled Apple pieces (preferable red and green)
• 2 Spring onion sticks, chopped
• A few Lettuce leaves
• Thousand Island dressing:
• 200 gms. Fresh Cream
• 3 tbsp. thick Curd
• 3 tbsp. Tomato sauce
• ½ tsp. chilli sauce
• 2 tsps. Chopped Onions
• 2 tsp. chopped Capsicums
• ¼ tsp. chopped Green chillies
• 1 level tsp. mustard powder
• 1 tbsp. powdered Sugar
• Salt to taste
Method:
- Beat cream till thick, add remaining ingredients and mix well.
- Store in fridge and use within 12 hours. Mix all the salad ingredients and keep in fridge.
- Just before serving, add the dressing and toss. Serve cold on a bed of lettuce.
