Ingredients:
• For the Outer Covering:
• Rice Flour – 1 cup
• Water – 1 cup
• Oil/Ghee – 1 tbsp
• Salt – pinch
• For The Filling:
• Fresh Coconut – 2 cups
• Jaggery – 1 cup
• Cinnamon for flavouring
Method:
- Mix all the outer covering ingredients very well and microwave it for 2 mins on high.
- Remove and mix in the food processor till it forms a ball.
- Mix all the filling ingredients and keep in the microwave for 2 mins on high.
- If some water remains, keep for another minute.
- Make modak-shaped pouches with the dough, stuff with the filling and steam till done.
