Ingredients:
• 1 cup – cooked white Chana
• 1 cup – cooked brown Chana
• 1 cup – cooked green Chana
• 1/2 cup – green capsicum, chopped
• 1 cup – red capsicum, chopped
• 1 cup – yellow capsicum, chopped
• 1 cup – spring onion, chopped
• For dressing:
• 2 tbsp – Olive oil
• 2 tbsp – yellow mustard
• 2 tbsp – Lime juice
• 2 tbsp – Honey
• Lettuce to garnish
• pepper to taste
• salt to taste
Method:
- Soak the three Chanas separately and cook separately to retain their color.
- Combine first set of ingredients together.
- Combine the dressing ingredients together and pour over the Chana mixture.
- Toss and serve, topped with shredded lettuce.
