Ingredients:

• Carrots – 2
• Baby Corn – 4
• Potatoes – 1
• Green pepper – 1
• Mustard – 1 tsp
• Cumin seeds – 1 tsp
• Turmeric powder – a pinch
• Chilli powder – 2 tsp
• Garam Masala powder – 1/2 tsp
• Coriander powder – 1 tsp
• Salt – to taste
• Powdered Mint – 1 tsp
• Cooking oil – 3 tbsp
• Tomato sauce – 3 tbsp

Method:

  1. Peel the carrots. Deseed the capsicum. Chop all the vegetables into small equal sized pieces.
  2. Heat oil in a frying pan, add the mustard and cumin seeds and allow them to splutter.
  3. Add a pinch of turmeric powder. Add the chopped vegetables and fry.
  4. Add the spices and mix well.
  5. Sprinkle water now and then to ensure that the vegetables are properly cooked.
  6. After the vegetables are cooked, reduce the flame. Add tomato sauce and stir for just a few minutes more. Serve hot.
