Ingredients:

• 1.5 cups – firm, Tofu pieces
• 1 – Tomato
• 1 – large Onion cubed
• 1/2 cup – bell peppers, chopped
• 1 – sprig Curry leaves
• 1/2 tsp – cumin
• 1/2 tsp – Ginger finely chopped
• 1/2 tsp – Red Chilli powder
• 1 tsp – coriander powder
• 1/4 tsp – cumin powder
• 1/2 tsp – kasuri Methi
• Oil as needed
• Coriander leaves for garnishing
• salt to taste.

Method:

  1. Heat oil in a wide pan, fry tofu till slightly golden brown, set aside
  2. In the same pan, add another tbsp. oil, add cumin when it begins to splutter, add curry leaves and ginger, saute
  3. Add tomatoes, salt, turmeric and fry till tomatoes turn fully mushy
  4. Add chilli powder, cumin and coriander powder, saute for a min
  5. Add onions, capsicum, mix well and fry on high for 2 mins
  6. Cover the lid and cook capsicums till almost done
  7. Add tofu, kasuri methi, mix well. cover and cook for 2 mins
  8. Add coriander leaves
  9. Serve hot.
