Ingredients:
• 1 ½ litres water
• 100 gms. fresh Chicken
• 30gms. fresh Mushrooms
• 5 gms. root ginger, sliced
• 2/3 stalks Lemon grass
• 100 ml. Coconut Milk
• Salt and pepper
• 1 tbsp. fish sauce
• 1 tbsp. Lemon juice
• 2 tbsp. chopped coriander for garnish
Method:
- Place all ingredients except lemon juice and fish sauce in the water, then allow to simmer for 1 hour.
- Test for seasoning.
- Stir in the lemon juice and fish sauce, continue simmering for a further 10 minutes.
- Garnish with chopped coriander.
