Ingredients:

• Raw Tomatoes – 10 nos (approx. 250 grams)
• Shallots – 50 grams
• Dessicated Coconut1 – 200 grams
• Turmeric powder – ½ tsp
• Green chillies – 6 nos
• Mustard Seeds – 1 tsp
• Salt – to taste
• Curry leaves – 2 sprigs
• Coconut2 Oil – 4 tbsp

Method:

  1. Wash the tomatoes and dry them up. Chop tomatoes finely.
  2. Take a handful and squeeze it with-in your palms to drain out excess water.
  3. Chop shallots and chillies finely.
  4. In a heavy bottomed non-stick pan, heat oil.
  5. Add mustard seeds and allow to pop.
  6. Add all the remaining ingredients, cover with a lid and low flame cook for about 15 mins.
  7. On removing the lid you will see tomatoes leaving a lot of water.
  8. Remove the lid, mix well, spread out evenly in the pan, cook for another 20 mins still on low flame, (this process helps in drying the extra water)
  9. Now your tomato thoran is ready to be served with plain rice.
