Ingredients:

• 8 – medium sized Tomatoes
• 1 cup – cooked prawns, cut finely
• 1 – large onion, cut finely
• 1 tbsp – chilli sauce
• 2 – eggs
• 1/4 tsp – pepper powder
• juice of 1 Lime
• 1 cup – bread crumbs
• Salt – to taste

Method:

  1. Slice the top of each tomato and scoop out the contents.
  2. Heat 2 tbsps oil, fry tomato pulp, onion, green chillies, prawn and pepper powder until dry.
  3. Add juice of 1 lime and salt to taste.
  4. Refill the tomatoes, spread beaten eggs and bread crumbs over.
  5. Bake at 160 degrees F in an ordinary oven for about 7-10 minutes or fry.
  6. Serve with sliced capsicums.
