Ingredients:

• 1.5 cups – Coconut Milk
• 1 cup – black eyed beans
• 1 cup – white pumpkin, chopped
• 1 cup – Pumpkin
• 4 – green chillies, slit
• 6 – Curry leaves
• 1 tbsp – oil
• Salt to taste

Method:

  1. Soak the beans overnight.
  2. Pressure cook the next day till nearly done.
  3. Add chopped pumpkin, salt and slit green chillies.
  4. Cook with a little water.
  5. When the pumpkin and the beans are completely cooked, pour hot oil tempered with curry leaves.
  6. Add the coconut milk and simmer for 3-4 minutes.
