Ingredients:

• For the omelette:
• 6 – eggs
• 2 – small Onions cut
• 1 – Green chilli cut
• Green peas
• Cheese (grated)
• Salt to taste
• 1/2 tsp – chilli powder
• 1/2 tsp – amchur masala
• For gravy:
• 1 – big Onion (cut into thin long pieces)
• 2 – tbsp Tomato puree
• 1 – tbsp Jeera powder
• 1tbsp coriander powder
• Chilli powder (according to taste)
• Turmeric powder
• Garam Masala
• Salt to taste
• Oil
• 1 – tbsp soya sauce
• 1 – tsp Ghee
• Ginger Garlic paste

Method:

  1. Take a bowl and beat the eggs.
  2. Add onions, green peas, chilli pieces, chilli powder and coriander powder and beat it again.
  3. Heat oil in a pan. When it becomes hot, pour the egg-mixture and fry as a single layer.
  4. When done, spread the grated cheese on the single layer of the omelette.
  5. Now fold the omelette from one side till you get about three layers.
  6. Cut the omelette into small square pieces and keep aside.
  7. To cook the gravy:
  8. Heat oil in a pan and when it becomes hot, add onions and fry until golden brown.
  9. Add ginger-garlic paste and fry again for a few minutes.
  10. Add jeera powder, coriander powder, chilli powder, and turmeric powder. Fry for some time.
  11. Add tomato puree and cook till oil separates.
  12. Add soya sauce and cook for a minute.
  13. Add the omelette pieces and cook for 1 minute.
  14. Add water around 2 cups and salt.
  15. Cover and let it cook till you get a thick gravy.
  16. Before serving add ghee and garam masala.
