Spicy, colourful and cheesy cauliflower baked dish

1 whole big cauliflower
1/2 cup grated mozzarella cheese
1/2 teaspoon black pepper powder
Water for boiling
Salt to taste

For Red Sauce
1 small onion chopped
2 teaspoon ginger-garlic paste
1 1/2 cups tomato puree
1/2 teaspoon red chilli powder (optional)
1 tablespoon oil
Salt to taste

For White Sauce
3 teaspoon butter
1 1/2 teaspoon flour
1 3/4 cups milk
1/2 teaspoon black pepper powder
Salt to taste

For Green Sauce
1 1/2 cup fresh coriander leaves
4-5 green chilies (as per taste)
1 cup grated coconut (fresh or desiccated)
1 inch ginger
2-3 garlic cloves (optional)
1 teaspoon cumin seeds
1/2 teaspoon rock salt
2 teaspoon lemon juice
Salt to taste

Red Sauce
1. Heat oil in a pan, and stir fry ginger-garlic paste and onion over medium to high heat until golden brown.
2. Add tomato puree and fry until oil separates.
3. Add salt and red chilli powder, remove from heat and keep aside.
White Sauce
4. Melt the butter, stir in the flour and saute over low-medium heat for 5-7 minutes without browning.
5. Slowly add the milk a little at a time, stirring continuously, to produce a smooth sauce.
6. Bring it to a boil and allow it to thicken, reduce the heat and cook for a few minutes.
7. Add salt and black pepper powder, remove from heat and keep aside.
Green Sauce
8. Wash coriander, green chilies.
9. In a blender grind the coriander, chilies, grated coconut, ginger, garlic and cumin seeds with limited amount of water to maintain a thick consistency.
10. Add salt and lemon juice and keep aside.
11. Remove leaves from cauliflower and wash it thoroughly.
12. Take a heavy large saucepan and combine cauliflower, salt and enough water to cover the whole cauliflower.
13. Bring water to boil. Now reduce heat and simmer until cauliflower is tender.
14. Drain and keep it aside.
15. Preheat oven to 350°F (unless preparing in advance).
16. Now with the help of a spoon stuff the interiors of the cauliflower with the green and red sauce one by one through the gaps at the bottom.
17. Arrange the cauliflower in a large round glass baking dish. Now pour the left over red and green sauce on top.
18. Now pour white sauce. Sprinkle with salt and pepper.
19. Sprinkle mozzarella cheese on top.
20. Bake in the oven till the cheese is melted and lightly crusted, for about 20-25 minutes.
21. Cool for about 5 minutes.
22. Serve as a main dish.
