Ingredients:
• 3 cups – All-purpose flour/Maida
• 1 tbsp – Oil
• Salt
• Oil for Deep Frying
• For stuffing:
• 1 cup – Whole black Urad Dal
• 1 – Onion (chopped)
• 2 – Green chillies (chopped)
• 1/4 cup – Coriander leaves (chopped)
• 1 tsp – Chaat masala
• 1/2 tsp – Ajwain seeds
• 1/2 tsp – Cumin seeds
• Salt
• Oil
Method:
- Soak the whole urad dals for at least 6 hours.
- Drain the water and grind as a coarse paste (Don’t add water).
- Heat oil, crackle the ajwain seeds and cumin seeds.
- Add the chopped onions, chopped green chillies and saute until the onions turns translucent.
- Now add the urad dal paste, chaat masala and salt and cook everything on simmer until the filling turns dry.
- Finally add the chopped coriander leaves and turn off the stove.
- Meanwhile knead a soft and stiff dough with maida, oil and water and keep aside for half an hour.
- Make medium sized rolls from the dough. Roll gently with the rolling pin.
- Place 2 tsps of the urad dal filling in the centre of the rolled dough.
- Cover the filling with the dough by slowly stretching it over the filling.
- Seal the ends and remove excess dough, roll gently again with a rolling pin.
- Meanwhile heat some oil for deep frying.
- Fry the kachoris in batches on a medium high flame.
- Cook for about 6 to 10 minutes till they turn golden brown.
