Ingredients:

• 2 cups – flour
• 125g – Butter or margarine
• 3/4 cup – castor Sugar
• 2/3 cup – Milk
• 2 – eggs
• 1 tsp – vanilla essence
• a pinch – salt
• For the icing:
• 3 cups – icing Sugar
• pink food colouring
• hot water to mix
• To decorate: icing Sugar with green colouring
• glace Cherries
• glace Pineapple

Method:

  1. Beat butter, sugar, and vanilla essence till light and fluffy.
  2. Add eggs one by one, beating well after each addition.
  3. Add the sieved ingredients (flour and salt) to the creamed mixture alternately with milk. Combine well.
  4. Spoon mixture into greased patty pans.
  5. Bake at 180 degree C for 15 minutes, or until golden brown.
  6. Remove from oven and cool on wire rack.
  7. Sift icing sugar, colour, and water to make a smooth consistency.
  8. Immediately spread on each cake and decorate with piped green icing, pineapple, and glace cherries.
