Ingredients:
• 250 gm – Unsalted Butter
• 125 gm – Plain flour
• 100 gm – Self raising flour
• 80 gm – Icing Sugar
• Corn flour-75 gm
• Vanilla Butter cream:
• 80 gm – Unsalted Butter
• 150 gm – Icing Sugar
• 1 tsp – Vanilla essence.
Method:
- Preheat the oven to 160 degree Celsius.
- Now line 2 oven trays with baking paper.
- Beat butter, essence and sugar in a bowl with an electric mixer until light and fluffy.
- Sift the dry ingredients little by little.
- Let the dough remain a little wet.
- Roll it out into small balls and place it on a baking tray.
- Press it with a wet fork to make pattern on top .
- Bake it in the preheated oven for 12 to 15 mins.
- Let the cookies stand in the sheet for 5 mins.
- Now transfer it to a wire rack and let it cool.
- Now mix all the cream ingredients together to form a smooth paste .
- Spoon the cream on the cooled cookies. Add a cookie on the top to make a sandwich.
- Serve with tea/ milk.
