Ingredients:

• 250 gm – Unsalted Butter
• 125 gm – Plain flour
• 100 gm – Self raising flour
• 80 gm – Icing Sugar
• Corn flour-75 gm
• Vanilla Butter cream:
• 80 gm – Unsalted Butter
• 150 gm – Icing Sugar
• 1 tsp – Vanilla essence.

Method:

  1. Preheat the oven to 160 degree Celsius.
  2. Now line 2 oven trays with baking paper.
  3. Beat butter, essence and sugar in a bowl with an electric mixer until light and fluffy.
  4. Sift the dry ingredients little by little.
  5. Let the dough remain a little wet.
  6. Roll it out into small balls and place it on a baking tray.
  7. Press it with a wet fork to make pattern on top .
  8. Bake it in the preheated oven for 12 to 15 mins.
  9. Let the cookies stand in the sheet for 5 mins.
  10. Now transfer it to a wire rack and let it cool.
  11. Now mix all the cream ingredients together to form a smooth paste .
  12. Spoon the cream on the cooled cookies. Add a cookie on the top to make a sandwich.
  13. Serve with tea/ milk.
