
Ingredients:
• 1 Chayote (chopped)
• 1 Onion (chopped)
• 1 Tomato (chopped)
• 1 cup – Cooked moong dal
• 1/2 tsp – Turmeric powder
• 2 Green chillies (slit)
• Salt
• Oil
• 1/2 tsp – Mustard Seeds +Urad dal
• 1 Dry Red Chillies
• 1 tbsp – Chopped Coriander leaves
• To roast and grind:
• 2 tbsp – Coriander seeds
• 1 tsp – Fenugreek seeds
• 3 tbsp – Grated Coconut
• 1/4 tsp – Asafoetida powder
• 4 Dry Red Chillies
• 1 tbsp – Urad Dal
Method:
- Dry roast all the ingredients from the list ‘to roast and grind’ one by one and grind into a coarse powder. Keep aside.
- Heat enough oil in a kadai, splutter the mustard seeds, dry red chillies and urad dal.
- Add the chopped onions, chopped tomatoes and slit green chillies and saute until the onions turn translucent and tomatoes turn mushy.
- Now add the chopped chayote pieces, saute for a few minutes, add the cooked moong dal, turmeric powder, salt.
- Bring everything to a boil, add the coarse spice powder and chopped coriander leaves to the kootu, cook for a while and put off the stove.
