Ingredients:

• 1 Chayote (chopped)
• 1 Onion (chopped)
• 1 Tomato (chopped)
• 1 cup – Cooked moong dal
• 1/2 tsp – Turmeric powder
• 2 Green chillies (slit)
• Salt
• Oil
• 1/2 tsp – Mustard Seeds +Urad dal
• 1 Dry Red Chillies
• 1 tbsp – Chopped Coriander leaves
• To roast and grind:
• 2 tbsp – Coriander seeds
• 1 tsp – Fenugreek seeds
• 3 tbsp – Grated Coconut
• 1/4 tsp – Asafoetida powder
• 4 Dry Red Chillies
• 1 tbsp – Urad Dal

Method:

  1. Dry roast all the ingredients from the list ‘to roast and grind’ one by one and grind into a coarse powder. Keep aside.
  2. Heat enough oil in a kadai, splutter the mustard seeds, dry red chillies and urad dal.
  3. Add the chopped onions, chopped tomatoes and slit green chillies and saute until the onions turn translucent and tomatoes turn mushy.
  4. Now add the chopped chayote pieces, saute for a few minutes, add the cooked moong dal, turmeric powder, salt.
  5. Bring everything to a boil, add the coarse spice powder and chopped coriander leaves to the kootu, cook for a while and put off the stove.
