Ingredients:

• 1/2 cup – almonds, ground
• 1/2 cup – parboiled brown rice, soaked
• 1 cup – water
• 1/2 cup – grated Coconut palm Sugar
• A few – walnuts, chopped
• A few Raisins
• 1/8 tsp – Cardamom powder
• A few – strands of Saffron

Method:

  1. Wash and pressure cook the soaked parboiled rice with 1.5 cups water for 3 whistles. Ratio is 1 rice: 3 water
  2. Let the pressure go off, remove the lid and just mash it a bit.
  3. Grind the almonds with 1 cup of water to smooth milk
  4. Pour it in the rice and continue to cook for 5 mins. Keep stirring
  5. Add the cardamom powder
  6. Crush the saffron strands and add to the rice
  7. Add grated palm sugar and let cook for another 5 to 7 mins, keep stirring, take care not to burn the kheer.
  8. Heat almond oil in a pan, fry the walnuts and raisins and garnish.
