
Ingredients:
• 1 lb-mixed vegetable (beans, carrot, cauliflower, corn, lima beans, green peas)
• 2- potato, medium
• 1- Onion (small)
• 7- Tomatoes (medium)
• 4 tbsp-butter or oil
• 4-green chillies
• 2 pieces- Garlic
• 1- Clove
• 1-cardamom
• Turmeric powder
• Cilantro for garnishing
• salt
Method:
- Cook potatoes separately and peel the skin and cut into small pieces. Cut the mixed vegetables in small pieces.
- Heat butter/oil in a pan. Add the vegetables to oil / butter and cook for 10 mins in medium fire. Do not add water.
- Grind onion, tomatoes, green chillies, garlic, clove, cardamom.
- The amount of onion should be half compared to amount of tomatoes. Add one glass of water.
- Move the cooked vegetables into a vessel.
- Heat 1 tbsp oil/butter.
- Add a pinch of turmeric powder. Add the onion /tomato gravy and cook for 10-15 mins till there is no onion smell. To this, add the cooked vegetables and potato pieces. Add salt. Cook for 10 mins .
- Garnish with cilantro and serve as side dish for fried rice, roti and puri.
