Ingredients:

• 1 lb-mixed vegetable (beans, carrot, cauliflower, corn, lima beans, green peas)
• 2- potato, medium
• 1- Onion (small)
• 7- Tomatoes (medium)
• 4 tbsp-butter or oil
• 4-green chillies
• 2 pieces- Garlic
• 1- Clove
• 1-cardamom
• Turmeric powder
• Cilantro for garnishing
• salt

Method:

  1. Cook potatoes separately and peel the skin and cut into small pieces. Cut the mixed vegetables in small pieces.
  2. Heat butter/oil in a pan. Add the vegetables to oil / butter and cook for 10 mins in medium fire. Do not add water.
  3. Grind onion, tomatoes, green chillies, garlic, clove, cardamom.
  4. The amount of onion should be half compared to amount of tomatoes. Add one glass of water.
  5. Move the cooked vegetables into a vessel.
  6. Heat 1 tbsp oil/butter.
  7. Add a pinch of turmeric powder. Add the onion /tomato gravy and cook for 10-15 mins till there is no onion smell. To this, add the cooked vegetables and potato pieces. Add salt. Cook for 10 mins .
  8. Garnish with cilantro and serve as side dish for fried rice, roti and puri.
