Ingredients:

• Bisquick (or similar) Baking Mix – 2 cups
• 1 cup – steamed mixed vegetable (such as broccoli, carrots, peas, Corn and cauliflower), cut into small pieces.
• 2 – eggs
• 3 – tbsp oil
• 3 tbsp – onion, finely chopped
• 1 tsp – Red Chilli powder
• Salt – to taste
• 1.5 cup – Milk

Method:

  1. Beat the eggs thoroughly. Add all the ingredients and milk to make thick fluffy consistency batter.
  2. Grease the muffin pot (usually it will hold 12 muffins), and fill three-fourth of each cup with the batter.
  3. Bake it for 15 mins at 190 degrees C.
  4. Let it cool and remove muffins from the cups.
  5. Serve hot with chutney or ketchup.
