
Ingredients:
• Bisquick (or similar) Baking Mix – 2 cups
• 1 cup – steamed mixed vegetable (such as broccoli, carrots, peas, Corn and cauliflower), cut into small pieces.
• 2 – eggs
• 3 – tbsp oil
• 3 tbsp – onion, finely chopped
• 1 tsp – Red Chilli powder
• Salt – to taste
• 1.5 cup – Milk
Method:
- Beat the eggs thoroughly. Add all the ingredients and milk to make thick fluffy consistency batter.
- Grease the muffin pot (usually it will hold 12 muffins), and fill three-fourth of each cup with the batter.
- Bake it for 15 mins at 190 degrees C.
- Let it cool and remove muffins from the cups.
- Serve hot with chutney or ketchup.
