
Ingredients:
• 1 cup – basmati Rice
• 1/2 cup – onion, sliced
• 1/2 tsp – garlic, minced
• 1/2 tsp – ginger, minced
• 2 – green chillies, chopped
• 1 tbsp – mint, chopped
• 1 tbsp – coriander leaves, chopped
• 2 Cloves
• 1 piece Cinnamon
• 2 Cardamom
• 1/4 tsp – pepper
• a pinch – shah Jeera
• little Mace
• 2 tbsp – oil or ghee1/2 cup – carrot, sliced
• 1/2 cup – cauliflower, cut into small pieces
• 1/2 cup – green peas, partially cooked
• salt to taste
Method:
- Wash the rice well and drain completely. Soak in 1 cup of water (minimum 15 mins, preferably 1 hour.)
- Crush all the dry spices slightly. Mix these with onion, ginger, garlic and green chillies and place in a microwave proof bowl.
- Add oil or ghee. Cook on full power for 6 mins, stirring twice in between,
- Add mint and coriander. Add rice with the soaking water, vegetables, salt and 1 cup boiling hot water.
- Cook covered on full power for 10 mins. Allow to stand for 5 mins. Stir gently with a fork and serve hot.
