Ingredients:

• 500g – Potatoes
• 3 Capsicums
• 375g – Onions
• 2 Cloves Garlic (chopped)
• 1 small white marrow
• 3 Tomatoes
• 2 tbsp – Ghee
• 1 cup – salad oil
• Salt and pepper to taste
• 4 fried eggs

Method:

  1. Peel the potatoes, onions, marrow and tomatoes. Remove the seeds from the capsicums and slice all the vegetables thinly.
  2. Melt the ghee in a frying pan. Add the oil, vegetables, garlic, salt and pepper.
  3. Mix well. Cover and cook for 15 mins. Remove the lid and cook for another 30 mins. Add water if needed.
  4. Pour this stew in a serving bowl and top with the fried eggs. Serve with boiled rice.
