Ingredients:
• 2 cups – white beans (canned and drained)
• 1 – Onion (chopped)
• 3 – Tomatoes (chopped)
• 2 – Garlic Cloves (minced)
• 1 – Carrot (chopped)
• 2 – Celery rib (chopped)
• 1/2 tsp – dry Thyme leaves
• 1 – Bay Leaves
• 2 cups – vegetable stock water
• 1/2 tsp – pepper powder
• salt to taste
• Olive oil
Method:
- Heat the olive oil and saute the onions with bay leaves.
- Add the chopped carrots, chopped celery and cook until tender.
- Add the chopped tomatoes, garlic cloves and thyme leaves and cook everything for a while.
- In the meantime, grind a cup of white beans as fine puree and keep aside.
- Add the remaining white beans, vegetable stock water, pepper powder, white bean puree to the vegetables and cook on medium high flame for a few minutes. Keep stirring.
- Once the soup thickens, put off the flame.
- Serve hot with toasted bread slices.
