Ingredients:

• 2 cups – white beans (canned and drained)
• 1 – Onion (chopped)
• 3 – Tomatoes (chopped)
• 2 – Garlic Cloves (minced)
• 1 – Carrot (chopped)
• 2 – Celery rib (chopped)
• 1/2 tsp – dry Thyme leaves
• 1 – Bay Leaves
• 2 cups – vegetable stock water
• 1/2 tsp – pepper powder
• salt to taste
• Olive oil

Method:

  1. Heat the olive oil and saute the onions with bay leaves.
  2. Add the chopped carrots, chopped celery and cook until tender.
  3. Add the chopped tomatoes, garlic cloves and thyme leaves and cook everything for a while.
  4. In the meantime, grind a cup of white beans as fine puree and keep aside.
  5. Add the remaining white beans, vegetable stock water, pepper powder, white bean puree to the vegetables and cook on medium high flame for a few minutes. Keep stirring.
  6. Once the soup thickens, put off the flame.
  7. Serve hot with toasted bread slices.
