Ingredients:

• 1 whole duck – with the skin
• 2 or 3 pods of Garlic – chopped very finely
• 1 tsp – chopped Ginger
• 2 tsp – white pepper powder
• Salt – to taste
• 2 tsp – Lime juice
• 2 tbsp – oil
• 1 tbsp – Butter

Method:

  1. Wash the duck well.
  2. In a big pan or pressure cooker heat the oil and then fry the duck together with the chopped ginger and garlic till it is light brown.
  3. Add the pepper powder, salt, lime juice and 2 or 3 cups of water and cook till the duck is tender.
  4. Transfer to a baking dish.
  5. Add a tablespoon of butter or ghee and bake in a moderate oven till the duck is nicely browned.
  6. Serve hot or cold with boiled vegetables and mashed potato.
