Ingredients:
• 5 cups – whole Wheat flour
• 1 cup – mix of flax, sesame and Pumpkin seeds
• 1/2 cup – Olive oil
• 1 tbsp – chilli flakes
• 2 tbsp – dry active yeast
• Salt – to taste
• 1 tsp – Sugar
• 1+1/2 cup – lukewarm water
• Flour – for dusting
Method:
- Mix the yeast, salt and sugar in lukewarm water, stir well and leave in a warm place for a few minutes until the yeast turns foamy.
- Take the whole wheat flour, mixed seeds and chilli flakes in a mixing bowl.
- Make a well in the centre and gradually add olive oil and foamy yeast.
- Knead into a soft dough.
- Place the dough in a greased bowl, cover the bowl with a towel and keep in a warm place for an hour.
- In one hour, the dough would have doubled in volume.
- Punch down the dough, dust with wheat flour, and knead gently.
- Shape the dough into a disc, score the top with a knife and dust some flour over it.
- Place the loaf on a baking tray lined with baking paper and keep in a warm place for half an hour.
- Meanwhile, preheat the oven to 350 F.
- Once it has risen, bake the bread for 20-25 minutes until the crust is brown and firm.
- Serve with cheese spread or with soups.
