Ingredients:

• 1 cup – Peanuts boiled, drained and chilled
• 1/4 cup – small Walnut pieces
• 2 tbsp – ground Peanut
• 1 – large Onion
• 1 – Tomato
• 1/4 cup – Pomegranate
• 1 tbsp – Spring onions finely chopped
• 1 tsp – fresh Coriander leaves
• 1/2 tsp – Cumin seeds crushed
• 1 – green chilli, chopped fine
• 1/2 tsp – Red Chilli powder
• 1/2 – Lemon juice, extracted
• 1/2 tsp – sugar, ground
• salt to taste

Method:

  1. Chop tomato and onion.
  2. Drain out any excess juices from the onion.
  3. Dip the onion in chilled water.
  4. Keep it in water for 30 minutes, drain, dab in thick in a kitchen towel.
  5. Toss all ingredients together, except coriander.
  6. Put mixture into a glass bowl.
  7. Garnish with coriander leaves.
  8. Chill before serving.
  9. Shelf life: Best when fresh.
