
Ingredients:
• 250 g – yard long beans, chopped
• 1 cup – water
• 1 – onion, chopped
• 2 – green chillies, slit
• 1/2 tsp – Mustard Seeds + Urad Dal
• Few – Curry leaves
• Salt – to taste
• Oil – as required
• To Grind:
• 3 tbsp – grated Coconut
• 3 – dry Red Chillies
• 1 tbsp – Cumin seeds
Method:
- In a microwave-safe bowl, place the chopped yard long beans, salt and 1 cup of water.
- Cook in the microwave for 10 minutes on high.
- Drain the excess water and keep the cooked beans aside.
- Meanwhile, grind the coconut, dry red chillies and cumin seeds into a coarse paste.
- Heat enough oil and add the mustard seeds, curry leaves and urad dal.
- Allow them to splutter.
- Add the onion and green chillies, saute until the onions turns translucent.
- Now add the ground paste and cook it for few minutes.
- Finally add the cooked yard long beans and salt, cook on a simmer.
- Serve hot as side dish.
