Ingredients:

• 1 kg – Ziminkhand – Cut into thin strips.
• 50 g – Green chillies – split lengthwise.
• 100g – Fresh Ginger – finely chopped
• 50g – Red Chilli powder
• 100g – Mustard – crushed dry
• 100g – Garlic – julienned
• 500 cc – Vinegar

Method:

  1. Keep the strips of Ziminkhand in pure water to avoid discoloration.
  2. Once the other ingredients are ready, take out the zaminkhand, add 2 tbsp of salt to it and keep aside for 5 minutes. Squeeze out the excess water.
  3. Now mix the zaminkhand with crushed mustard, green chillies, red chilli powder, ginger and garlic.
  4. Add salt accordingly and add the vinegar into the mixture.
  5. Stir it gently. Check for salt.
  6. Transfer into a jar and keep it tightly closed.
  7. This can be used just 24 hours after preparation.
