Ingredients:
• 2 cup – zucchini, cut into juliennes (do not peel)
• 2 cup – mixed capsicums, cut into thin strips (discard seeds)
• 1 cup – onion, thinly sliced
• 2 tbsp – Olive oil
• 2 tbsp – Honey
• 2 tbsp – cider or Balsamic Vinegar
• 2 tbsp – yellow mustard
• salt and pepper to taste
Method:
- Soak the onion in ice cold water for 1/2 hour. Drain and pat dry.
- Combine onion, zucchini and capsicums.
- Whisk olive oil, honey, vinegar, and mustard, salt and pepper together.
- Pour the dressing over the vegetable mixture. Toss and serve immediately.
