Ingredients:

• 1/2 kg – Zucchini (cut into medium pieces)
• 2 tbsp – cooking oil
• 1 – large Onion (sliced)
• 2 tsp – chilli powder
• 1 tsp – minced Garlic
• 1 tsp – coriander powder
• 1 tbsp – Vinegar
• 2 – large Tomatoes (chopped)
• Salt to taste

Method:

  1. Heat oil in a pan and add onion, green chillies and garlic and fry till the onions turn light brown.
  2. Add zucchini, tomatoes, chilli powder, coriander powder, salt and vinegar, and cook on low heat for about 10 minutes.
