Ingredients:
• 3 cups – Zucchini (grated)
• 3 cups – All-purpose flour
• 2 cups – Whole Wheat flour
• 1+1 tbsp – Active Dry yeast
• 4 tbsp – Parmesan cheese (grated)
• 2 tbsp – Olive oil
• Salt
• 1 tsp – Red Chilli flakes
• Oil
• 1 tbsp – Sesame seeds for garnishing
Method:
- Place the grated zucchini in a colander, sprinkle salt, toss and keep aside for a few minutes. Then pat it dry with paper towels and keep aside.
- Mix the flours, yeast and parmesan together. Add chilli flakes.
- Now add the zucchini, pour some lukewarm water and knead into a stiff, smooth dough.
- Place this dough in a greased bowl and let it rest in a warm place for 1.5 hours. The dough will have doubled in size by then.
- Knead the dough lightly, divide into 5-7 balls.
- Arrange the balls in a pan, brush the top with milk and sprinkle sesame seeds over it. Let it sit again for 30 minutes.
- Pre-heat the oven to 400 degrees Fahrenheit. Bake the zucchini bread for 25-30 minutes until bread crust turns golden brown.
