
Ingredients:
• 1 cup – Zucchinis (cubed)
• 6 – Garlic Cloves
• 1 tbsp – Red Chilli powder
• 1 tsp – Amchur powder
• 1 tbsp – Mustard Seeds
• 1 tbsp – Fenugreek seeds
• Oil
• Salt
• 1/2 tsp – Mustard Seeds for tempering
Method:
- Dry roast the mustard seeds, and fenugreek seeds together in a pan, cool and grind to a fine powder.
- In a bowl, mix the zucchini, red chilli powder, amchur powder, ground mustard-fenugreek powder, and salt and mix it with a wooden spoon.
- Heat oil, splutter mustard seeds. Add the garlic cloves and fry till they turn slightly brown.
- Add this tempering to the zucchinis and spices.
- Mix well and store in an air tight box.
