Ingredients:

• 3 cups – Zucchinis (cubed)
• 1 – Onion (chopped)
• 1 – Tomato (chopped)
• 1 tsp – Mustard Seeds + Cumin seeds
• A few Curry leaves
• 1/2 cup – Yellow moong dal
• 1/4 tsp – Turmeric powder
• 1/4 tsp – Asafoetida powder
• Salt
• Oil
• To grind:
• 2 – Dry Red Chillies
• 1 tbsp – Black pepper
• 1 tbsp – Channa dal
• 1 tbsp – Coriander seeds
• 3 tbsp – Grated Coconut

Method:

  1. Heat a little oil, and one by one, roast the spices that are to be ground until they turn brown.
  2. When it cools, grind it to a smooth paste with enough water and set aside.
  3. Pressure cook the moong dal, asafoetida powder, and turmeric powder with enough water, for 3 whistles.
  4. Heat oil in a kadai, splutter the mustard seeds, and cumin seeds.
  5. Add the onions and tomatoes and salt, and cook.
  6. Now add the cubed zucchinis and cook on simmer until it is half done.
  7. Add the ground paste, and cooked dal to this, and bring to boil. Reduce the flame and cook until the vegetables are well cooked.
  8. Serve with rice, idlis or dosas. This kootu works wonders even with pongal.
