Ingredients:
• 3 cups – Zucchinis (cubed)
• 1 – Onion (chopped)
• 1 – Tomato (chopped)
• 1 tsp – Mustard Seeds + Cumin seeds
• A few Curry leaves
• 1/2 cup – Yellow moong dal
• 1/4 tsp – Turmeric powder
• 1/4 tsp – Asafoetida powder
• Salt
• Oil
• To grind:
• 2 – Dry Red Chillies
• 1 tbsp – Black pepper
• 1 tbsp – Channa dal
• 1 tbsp – Coriander seeds
• 3 tbsp – Grated Coconut
Method:
- Heat a little oil, and one by one, roast the spices that are to be ground until they turn brown.
- When it cools, grind it to a smooth paste with enough water and set aside.
- Pressure cook the moong dal, asafoetida powder, and turmeric powder with enough water, for 3 whistles.
- Heat oil in a kadai, splutter the mustard seeds, and cumin seeds.
- Add the onions and tomatoes and salt, and cook.
- Now add the cubed zucchinis and cook on simmer until it is half done.
- Add the ground paste, and cooked dal to this, and bring to boil. Reduce the flame and cook until the vegetables are well cooked.
- Serve with rice, idlis or dosas. This kootu works wonders even with pongal.
