Ingredients:
• 2 cups – Zucchini (grated)
• 2 cups – Basmati Rice (Cooked)
• 3 – Bay Leaves
• 2 – Green chillies (slit opened)
• 2 – Dry Red Chillies
• 1 tsp – Garam Masala powder
• 1/2 tsp – Pepper powder
• 1 tsp – Cumin seed powder
• 1 – Onion (big, sliced)
• Salt
• Oil
• 2 tsp – Curry leaves (chopped)
Method:
- Heat oil in a kadai.
- Fry the bay leaves, followed by red chillies.
- Then fry the onion until it turns translucent.
- Add the grated zucchini, pepper powder, garam masala powder, cumin seed powder, and green chillies as well as salt. Stir well.
- Zucchini may release water. Cover and cook.
- Once the zucchinis are cooked, raise the heat and cook till all the water evaporates.
- Add the cooked basmati rice, mix well.
- Add the curry leaves to the rice and cook for some more time.
- Serve hot with papads or chips or any non-vegetarian dishes.
