Ingredients:
• 8 potatoes, boiled, peeled
• 1 cup – cheese, shredded
• 3 tbsp – oil
• 3 eggs, beaten
• 1/4 cup – breadcrumbs
• 1 tsp – ginger, shredded
• 2 green chillies, minced
• 1 cup – coriander leaves, chopped
• Salt and pepper to taste
Method:
- Rub oil on the inside of a pie dish and cover with crumbs.
- Knead potatoes into a dough with a little oil and salt.
- Add ½ of ginger, chillies, cheese, coriander leaves and pepper.
- Divide into 2 balls.
- Roll out one ball and cover the bottom of the pie dish.
- Mix peas with remaining ingredients leaving a little cheese and mix with beaten egg.
- Put into the potato case.
- Cover with remaining potato mixture.
- Brush with egg and top with cheese.
- Bake in a medium oven till done.
- Slice and serve warm.
