Ingredients:

• 1/2 cup – Butter
• 3 tbsp – powdered Sugar
• 2 – Egg yolks
• 1 1/4 cups – sifted flour
• 1/3 cup – Almonds (or cashewnuts), chopped
• 3 tsp – Lemon rind
• 2 – Egg whites
• 5 – large apples
• 5 tbsp – Sugar
• 2 tsp – Lemon juice
• 4 – Egg whites
• 1/2 cup – Sugar

Method:

  1. Beat butter together with powdered sugar and 2 egg yolks till light and fluffy.
  2. Add sifted flour, almonds (or cashew nuts), chopped, and 3 tsp. lemon rind. Press into a baking tin.
  3. Brush with a lightly beaten egg white.
  4. Bake at 180 degree C for 15 mins. Cool.
  5. Boiling the apples, skinned and cut into slices, with 5 tbsp. sugar till apples are tender but not broken. Cool.
  6. Add 2 tbsps. lemon juice to apples.
  7. Arrange apples on baked crust.
  8. Beat 4 egg whites till foamy.
  9. Beat in 1/2 cup sugar till it reaches meringue consistency (very stiff and glossy).
  10. Arrange meringue on apples.
  11. Bake at 180 degrees C for 10-15 mins. till golden brown. Serve hot.
