Ingredients:
• 3 large long Brinjals
• 2 onions, grated
• 2 tomatoes, chopped
• 1 tsp – ginger-garlic paste
• 1 tsp – Green chilli paste
• 1/2 tsp – chilli powder
• 1/2 tsp – Lemon juice
• 3 tbsp – rice, cooked
• 5 tbsp – oil
• Grated cheese as needed
• Salt and pepper to taste
Method:
- Remove stems and cut brinjals into two – from top to bottom.
- Scoop out flesh and apply lemon juice to brinjal cavities.
- Meanwhile heat oil.
- Add ginger-garlic and onions. Brown.
- Add tomatoes, brinjal flesh, green chilli paste, chilli powder and salt and pepper.
- Cook till soft and add rice and a little cheese.
- Spoon mixture into 6 greased brinjal cases and top with plenty of cheese.
- Bake in a hot oven till cases are soft and cheese has melted.
- Serve hot.
